Το καρυοφυλλένιο, συντακτικά γνωστό ως (−)-β-καρυοφυλλένιο,[1] είναι φυσικό δικυκλικό σεσκιτερπένιο, που αποτελεί συστατικό πολλών φυσικών αιθέριων ελαίων, ιδιαίτερα του γαρυφαλέλαιου, ελαίου από τους μίσχους και τα άνθη του είδους Syzygium aromaticum (γαρύφαλλο),[2] επίσης ανευρίσκεται στο αιθέριο έλαιο του είδους Cannabis sativa, στο δεντρολίβανο,[3] και τον λυκίσκο.[4]
Απαντάται συνήθως ως μείγμα από κοινού με το ισοκαρυοφυλλένιο (το ισομερές του, που είναι διπλού δεσμού cis) και επίσης μαζί με το α-χουμουλένιο, ένα ισομερές του με ανοιχτό δακτύλιο.
Το καρυοφυλλένιο είναι αξιοσημείωτο για το ότι έχει έναν δακτύλιο κυκλοβουτανίου, καθώς και έναν trans -διπλό δεσμό σε έναν 9-μελή δακτύλιο, που σημειωτέον και τα δύο είναι εξαιρετικά σπάνια στη φύση.
Το καρυοφυλλένιο είναι μια από τις χημικές ενώσεις που συμβάλλει στο άρωμα του μαύρου πιπεριού.[5]
Η πρώτη ολική σύνθεση του καρυοφυλλενίου έγινε το 1964 από τον οργανικό χημικό EJ Corey και θεωρήθηκε ως μια από τις κλασικές επιδείξεις των δυνατοτήτων της συνθετικής οργανικής χημείας για εκείνη την εποχή.[6]
